The Art of Roasting is Practiced Here
We fire up our 25 lb. small batch San Francisco Drum Roaster every day. After it is warmed up, we start roasting one carefully crafted roast after another.
Each round is started at 300 degrees and slowly increased 10 degrees at a time. At 380 degrees the coffee enters first crack as moisture is forced out and the bean expands. At this point the sugars are caramelizing and the beans are turning brown. The roast continues as the temperature slowly rises. At 400 to 420 degrees the second crack begins signifying the full expansion of the bean. As the bean progresses the roaster carefully monitors development through color, beads of oil rising to the surface, smell and smoke. At the optimum time for the particular coffee variety the roaster opens the door allowing the coffee to drop into the cooling tray. Cool air is drawn through the beans as the roasting process slowly comes to an end. The beans are cooled for five to seven minutes and then packaged fresh and sent to you.
